Chicken and orange salad


Fresh and very testy salad! I like this salad because it is simple and easy to prepare and the combination of chicken, orange, almonds and pumping seeds is amazing.

The acidity of the orange gives a good contrast with the chicken and the seeds. You can use the orange peel like a bowl to serve the salad; it looks really good.


The time you need for this salad is approximately 30 minutes. This salad is for 3 to 4 persons.
You will need:
  • 2 oranges 
  • 2 chicken breasts
  • 100 gr mix salad (I use corn salad and rucola)   
  • 100 gr almond flakes 
  • 30 gr pumpin seeds
  • 120 ml olive oil 
  • 50 ml red wine vinegar 
  • 1 tsp whole grain mustard 
  • 1/2 tsp salt
  • 1/4 ground pepper 


First fry the chicken breast and then cut it in small squares, like in the picture. Set aside.



 Cut the bottom of the oranges to make them stable when you use them to serve the salad. After that, cut each in two halves, and carefully remove the pulp inside. Cut the pulp in small squares the same size as the chicken breast squares.


 Now toast in a pan the almond flakes and pumping seeds until golden brow.


In a container add the olive oil, red wine vinegar, whole grain mustard, salt and ground pepper. Mix it well.
Now we have all our ingredients ready, and we can assemble our salad. Mix all and pour inside the orange peel or in a nice plate.


The salad is ready to serve. With this dish I prefer to drink some red wine (Cabernet Sauvignon).  Usually after this salad I like to eat some strong flavored dish, because this salad has very light taste.
