Apple salad with goat cheese and honey dressing

This month I have prepared this salad twice. I found this recipe in a Spanish blog and I decide to give it a try and the result was really good. My friends liked it a lot because this salad is easy to eat and the flavors and ingredients are very familiar... with this salad it is very difficult to fail :).

It is simple, delicious, easy salad and fast to prepare. The presentation is also beautiful and you can impress to your guests. I like a lot the combination of apple and goat cheese with the honey dressing. It is really soft and gives a good sensation when you eat it.

In order to prepare this salad, you will need around 20 minutes. This recipe is for 3 to 4 persons.
You will need:

  • 2 sweet apple
  • 1 lemon
  • goat cheese, approximately 200gr or more
  • lettuce or salad mix
  • 4 tbsp olive oil
  • 2 tbsp squeezed lemon juice
  • 2 tbsp honey
  • 1/3 tsp salt at your taste

First let's prepare the dressing. In a container put the olive oil, lemon juice, honey and salt. Mix them well and set aside until the salad is served.

Slice the apple and remove the center area where the seeds are. You can also remove the apple core first and then slice it.

Impregnate the apples slices with lemon. This procedure prevents the oxidation of the apple, that otherwise would become brown. The lemon also brings up the apple flavor. Just eat one piece to try ;-)

Slice goat cheese as well.

Everything is now ready to start assembling the salad. First an apple slice, then salad, then apple, then goat cheese, and so forth, so salad and goat cheese will be always between two slices of apple.

Before serving, pour the dressing on top of the salad.

with this salad you can drink white wine (Sauvignon Blanc). The combination is refreshing and invigorating.

Enjoy your salad and if you have some advice please let me know.

Thank you. See you in my next post :)
