Blueberry muffins


Every Sunday morning I woke up with this craving to eat freshly baked muffins. I was trying many recipes and looking for the best and after all I found the correct combination and the results are amazingly good, with tender and delicious blueberry muffins.


This recipe is basically very easy and fast, You can find all the ingredients normally in your kitchen cupboard.


The time you need to prepare this muffins is around 45 minutes. This recipe is for 12 to 14 muffins depending of the size of the mold.
For this muffins, you need:
  • 1/4 cup melted butter
  • eggs
  • 1/2 tsp salt
  • 1 cup sugar and 1tbsp sugar
  • 2 cups flour
  • 2 1/2 baking powder
  • 1 tsp vanilla essence 
  • 1/2 cup milk
  • 1 tbsp orange/lemon zest 
  • 2 cups frozen blueberries  
Pre heat the oven at 175°C.


Mix together the butter, eggs and sugar.


Now add the flour, salt, baking powder alternating with the milk, mix it well.


Add the vanilla essence and the orange or lemon zest and beat it.


Before you mix the blueberries mix them with 1tbsp flour. This way the blueberries will mix better with the dough.


Place the blueberries in the dough and blend it.


Grease the molds and place the dough. Bake it for 20 to 25 minutes at 175°C until golden brown and the muffin tops crack.


It is ready! I always like to eat this muffins with my coffee and milk in the mornings or in the afternoon.
You can also use strawberries or raspberries, but then I would recommend you to remove the orange zest from the recipe.
