Stuffed pork sirloin



This time I have prepared stuffed pork sirloin. It is a bit difficult but is a delicious and looks really nice on the plate. You can prepare this recipe in special occasions and the cost of the ingredients is not really expensive.


The paprika, parmesan cheese and basilica inside the pork is a marvelous combination. It is very juicy and tender and the tomato sauce gives a bit of acidity to the mixture.
I served it with a kind of mashed potatoes with some mediterranean herbs. Those give a nice contrast and combine well with this stuffed sirloin.


The time you needed to prepare this stuffed pork sirloin is around 1 hour. This recipe is for 3 or 4 persons.
For this stuffed sirloin you need:

  • 800 gr pork sirloin
  • 100 gr jamón serrano (spanish ham) or parma ham
  • 20 leaves fresh spinach 
  • 20 leaves basilica 
  • 7 tbsp parmesan cheese 
  • 2 red roasted peppers (you can buy ready made at super markets)
  • salt and pepper
  • kitchen string
  • olive oil
For the sauce:
  • 4 chopped garlic 
  • 2 onions
  • 200 gr cherry tomatoes 
  • 2 tbsp tomato paste
  • 2 bay leaves 
  • 200 ml chicken stock
  • salt and pepper


Now we take the sirloin and start to cut to open it in order to stuff it later. You have to cut it as if you would be unrolling it into a sheet. It is like if you would have a sheet of paper folded into a third of its size and you had to unfold it.

For that, take the sirloin and instead of cutting it from the middle, make the incision a little bit higher and slide the knife without getting to the end, so the sirloin will not be completely cut into two pieces. 


Now, from the inside of the meat piece, make a cut in the middle and again do not go all the way till the end so you will finally get a "sheet" of mean that it is 3 times thinner than the original thickness of the sirloin but three times wider.


Now it is ready.


Add desired salt and pepper to the sirloin and after that place the slices of serrano han on the sirloin.


Place now all the rest of ingredients for the filling, spinach, basilica, parmesan cheese, roasted pepper, salt and pepper.


Close the sirloin rolling it. In order to secure it so it will not open while tying, you can stick toothpicks on the roll.

It is ready.


Fry both sides of  the sirloin roll until golden brown and set aside.


Chop the onions and the tomatoes in small pieces.


Fry it until golden brown.


Add the chopped tomatoes, tomato paste, bay leaves and chicken stock and season with salt and pepper to taste. Cook it for 10 minutes approximately.


Pour all the sauce in the blender and mix well.


In the frying pan where have the sirloin add the sauce, cover it with a lid and cook for about 20 to 30 minutes at medium heat until cooked (if you have a kitchen thermometer, stick it inside the meat and check that the temperature inside is between 70°C and 75 °C to make sure that the pork is properly cooked). 


The stuffed sirloin is now ready! Just cut it in slices and serve it with mashed potatoes, rice or bread.

Some times if I have guests and I don't have time to cook at that moment, I prefer to prepare the recipe in advance and just warm it up in the microwave before serving. This is a good idea because this stuffed sirloin doesn't change the flavor if you reheat it.
You can drink with this sirloin Cabernet franc or Merlot wine.
