Spinach salad with brie and walnuts



Some friends visited us last weekend and I decided to prepare a different salad for this occasion.



The dressing is prepared with yogurt and lemon. They match very well with the nuts and spinach. I am not a big fan of spinach but this salad had a good combination of ingredients, that I thought I must try it and it was really good after all.


The time you prepare this salad is around 30 minutes. This is for 4 persons.
For the salad you will need:
  • 250 gr spinach 
  • 200 gr brie cheese (you can put more if you like)
  • 100 gr walnuts 
  • 1/2 red paprika 
  • 1/2 yellow or orange paprika
And for the dressing:
  • 150 gr plane yogurt
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp oregano 
  • 1tsp dry basilica 
  • 1 tsp chive
  • 1 1/2 tsp pepper
  • salt 


Cut the red and yellow paprika in small cubes and the brie cheese in medium pieces of 2cm x 2cm approximately.


In a big bowl place the spinach, paprika, walnuts and brie cheese and set aside.

For the dressing: mix well all the ingredients: yogurt, olive oil, lemon juice, oregano, basilica, chive, pepper and as much salt as you like.

Now we have the salad ready and you only need to add the dressing before serving.



This salad is really good. If you would like you can change the spinach for rucola, or watercress. For the cheese you can use camembert instead of brie if you like. Just let your imagination free.
