Chicken breasts with coconut cream


These days we need some more energy because the autumn is already here (Helsinki). This recipe is another of my favorites. I also like this recipe because you can do it in short time and you can have a good and delicious meal. It is a bit spicy though.


I found this recipe in my favorite cooking book and I added some extra ingredients to improve the plate. I think this is an Asian style chicken with a good combination of coconut, spices and chicken. For me it is really addictive.


The time needed to prepare this exotic chicken is around 15 minutes plus 20 to 30 minutes in the oven. This is for 5 or 6 persons.
For this chicken you need: 
  • 5 or 6 chicken breast 
  • 90 gr flour
  • olive oil
  • 1 tbsp corn flour 
  • 500 ml coconut cream
  • 1/2 onion
  • 2 green or red chile (red chile can be more spicy)
  • salt and pepper



Add salt and pepper to the flour as desired.


Dust chicken breast with the flour.


Fry chicken breast in olive oil at hight heat for 3 minutes each side until golden.


Place the chicken breast in a tray and then set them aside.


Cut the onion in small squares and the chile in thin slices. If you want you can use gloves to protect your hands from the chile because it can irritate your skin.


In a small pot put the coconut cream, onion, chile, salt, pepper and corn flour. In the picture you can see more chile (red and yellow) because I like a bit more spicy. It is up to you.


Mix well and turn the heat to medium and cook until the mixture boils. Remove from the heat.

Preheat the oven at 180 °C. 


Pour the sauce on top of the chicken breasts and distribute well around all the of them.


Now it is ready to bake for 20 to 30 minutes.



It is ready! 

This chicken is best when accompanied with beer. You can choose a malt beerThe sweet taste of the malt and its bitter tone matches very well with spicy food and it also helps to relieve the burning feeling in your mouth :-)

  1. Mmmmmm, this chicken will taste really delicious with a german white wine with a little of residual sugar, like riesling or gewuztraminer (do you remember?). Best regards!
